I rolled a 5* on soft pity. Did my pity reset?

Yes, your pity have reset. Your pity counter will reset every time you get a 5*. Now if the 5* you got is the current event 5*, then your next pity is 50/50. If you got a 5* that's not in the current banner, your next pity is a guaranteed limited/event 5*.
