If I switch servers from America to EU and then switch back will my progress on the two separate be saved on both allowing me to play on both?

Each server keeps a separate login credential, if I remember correctly. If you're playing on the PC/Mobile, as long as you enter the correct credentials for the respective regions, you should be able to keep your progress on different accounts.
