I've gotten to Chapter I: Act II - Zhongli's Treat, and I don't seem to have a follow on quest.

Is Act III not in the game atm? Or have I missed something?

No the game isn't finished yet. I'm at the same bit as you and have been searching for a while to realize the game is in open beta. So look out for five huge updated in the future. The map will grow to one of the other archons territory and add several archon quests. As for when, I have no idea and no one know at the moment.

So can we do anything about "Dihua Marsh" or the Jade Chamber invitation?

Gives a time period which the objective shows up at for example between 16:00 TO 21:00 once you do this the objective shows up and you meet him for dinner.
