When you switch from farmer to raider, will you still be able to use the production center?

No the production center is only operational when you are a farmer. As a raider you can build and upgrade the Trap House building that gives extra might and resistance to your class APC to help you attack enemies.

The production center won't disappear, but you won't get to use it anymore. And its buffs won't apply.
