How do I choose soldiers to march in order to attack Zombies etc?

Put in whichever soldiers you have that best fill the slots and give the most combat power for that APC. (that is the number on the top left of the troop select screen for the APC with the crossed weapons icon.)
A formation of fighters then vehicles then shooters seems to be a good general formation for zombies but you may find improvements with other setups.
