How do I stop my city from burning?

Your city will stop burning by itself 30 minutes after the attack. You do not need to do anything. However you do need to rebuild the walls, which means tap on the Garrison building and select 'Defense'. You can tap to add 80 points back to your Fortification stat every 30 minutes. Remember to do this until you are back to full strength.
