How do I cash in the experience points in my store?

If you mean the hero experience then you need to go to the Hero interface (Hero menu button bottom right). In this section you can select a hero to open their page and then tap the 'Level' icon in the top left. Here you can select from your available EXP boosts to apply to that hero.
