You cannot pause the game. You can shield for 3 days only, after that you may be attacked. I would recommend going to the Garrison building -> Garrison option and unticking the option for each APC to Join Defense. This will leave your city relatively undefended but will mean that you will not loose too many troops if you are attacked.

If you do get attacked you will lose your resources (only the warehoused resources shown at the top of the screen). You can use these up before you stop playing to make yourself less of a target. You may get used as a farm while you are away and if someone zeroes you then you may teleport to a new location but you will only lose the little resources you generate during your time away and when you return you will start producing again.
