I know that a best unit for gathering resources is cavalry. My question is: should I upgrade cavalry tier in order to get better resource gathering amount (I am a farmer). Because when I checked in stable, tier 1 of cavalry has highest load parameter - 15. As a tier grow, this parameter falls down.

The best troops to use for the highest gathering capacity are T1 Cavalry as you said. This will let you gather the most. As you level up though and you increase the number of troops you can have in a legion you will most likely reach a point where you can gather more than is available, especially as a farmer. So using higher tier cavalry will not be a problem.
