Trying to exchange medals in the arena, I find that the system will let me change 1 medal type while my fixed number is 7 or even more, and while I have a bank of medals to change. I have to access each of them to find which could be exchanged. I'm pretty shure that something in the app is faulty in that regard, or maybe I'm failing to grasp some kind of game rules on that subject.?

This does sound like a glitch. Exchanging medals can be done with any amount up to the limit of your building (and how many you have of each). You will need to have the gold available also though for it to let you exchange. There is a cost in gold for each medal.
