How do I send workers to do research?

To start research you tap on the Institute building or on the research button that is a bottle icon in the top left side of the main city view screen. Between the build queue and legion buttons.

You do not send workers, instead you just select from the various research tree options and start any research item that is open for you. You can only do one research at a time.
