Does legion stamina play any role in resources gathering? Does high stamina means high resources gathering or only we should check on load carrying capacity?

No it doesn't. Stamina is only needed to send out the marches, as long as you have at least 10 then you can send the to gather. The troop type and numbers will affect how much you can gather and accessories / parts and other buffs from class attributes and items can affect the speed / totals gathered as well.
