I can see in the Accessory Production menu there are steps to unlock 2nd, 3rd, 4th etc crafting slots...

I can see in the Accessory Production menu there are steps to unlock 2nd, 3rd, 4th etc crafting slots.

Do these slots refer to the number of items you can queue up ready to manufacture, or is there a possibility to unlock multiple production trains?

Yes these are the slots for queuing up items. There is no way to unlock more than one production train.
