Once you heat Team Level 11, the Elite Chapters will be available. These Elite Chapters are much harder versions of the stages you already completed.
Soul Stones are only available thrice a day, make sure you have extra stamina for that gig.

What are the chances of Soul Stone dropping?
Not much, but if you managed to have two in one sitting, there will be none for the day.
