Like any other similar simulation game out there, you can only earn greater rewards upon investing on better items. In Idle Supermarket Tycoon, this is achieved when you unlock higher tiered departments in the game, or upon reaching a specific level when upgrading the departments themselves.

Increasing collection rate thru department upgrade:

Whenever you upgrade your department -- for instance the produce department, you’ll get a slight increase in the value of the product that you are selling, which means you can sell it at a higher price. Increase in investment in the department would bring in better goods especially when you reach a certain threshold in upgrade that unlocks a better item that can be sold there. For example, on the image below, Level 1500 - 1999 on the Bakery will let you sell Valhalla Bread. On its 1999th level, the item is sold for 15.357 Sd (Septendecillion - 10 x 54 zeroes), while upgrading the department to the 2000th level, you’ll unlock the Divine Bread item -- which sells 1.921 Nd (Novemdecillion - 10 x 63 zeroes).

That said, make sure that you have the departments upgraded to the best item that you could afford to showcase - as there would be a point where upgrades can no longer purchased or are too hard to purchase due to their high price. If it hurts you to upgrade the level of one department (slashes at least 10 percent of your inventory), move on to another department. If you’ve maxed out upgrades of the available departments and unlocking the concluding department is almost impossible, then this signifies that you should save up and move on to the next city.

Increasing collection rate thru unlocking higher tiered departments:

Upgrading existing departments would truly be helpful in maximizing the profits you get per customer. However, unlocking higher tiered departments is a far better deal in increasing your profits when compared to upgrading existing departments. The reason is that higher tiered departments usually sell higher priced items like jewelry, cars, and real estate. The volume of clients served in these departments are not that much, but the value of profit you get per sale is outrageously big -- which is why it really becomes impactful that you make sure they are accommodated as soon as possible as it will truly hurt to see them leave due to the long queue lines on your cashier.

Increasing collection rate / profits by Epic Upgrades:

When you get the hang of playing the game, you’ll soon be wary of the statistics going on in your supermarket. As you progress, you’ll learn that one way to passively improve the performance of the supermarket is by investing on Epic Upgrades. Investing in “Seal of Quality” for example will multiply your profits to a certain factor (increases as it is upgraded). You can also invest on managers (on different departments) to improve the productivity of those specific departments (which will then affect the profits on that pertaining department)
