The hearts are your 'lives'. If you fail a level you will lose a heart, and if you run out then you can't play any more. They will regenerate over time so you can just wait a short time, or you can pay in game coins to refill them or have unlimited lives for a period of time. There are also options to watch adverts for 1 heart, ask in game friends to donate hearts to you.
