Gold bars are used to buy upgrades and downgrades for certain coin-producing buildings. Currently there are only 9 buildings with the Style Picker option, but more are planned: Estate, Fountain, Stables, Orangerie, Windmill, Vineyard, Central Station, Observatory, and Bathhouse. Tap on any of them and select the icon with the house&hammer symbol to see the options. Upgrading to the top 6th level will provide more flower value.

I find the entire "gold bar" process tedious and extremely annoying. I could certainly do without it.
I'm always tempted to not play a competition when the prize is gold, but there are only 2 or 3 of that play so... :-!
