Tap the item you can afford to lose and hit the blue dollar sign button on the item menu. It converts to smiley coins. The larger issue is avoiding a full board to begin with. Easiest way is to focus on one or two order items at a time (ex: customer wants a star fish and tortilla tapas; just tap the Bucket and Picnic Basket until the order is complete; then tap the other items that dispense more items).
