How do you gain guild coins? I’ve contributed to guild projects but not gained any coins!

Coins you get from guild quests are shared, so you don't get them individually! If you go to Guild Island, you can check the total number of coins at the top right. Personally, you have to buy them as jewelry at a bank in Guild Island Village. Only coins you bought from the bank will pop up individually when you see the list of members at Guild Island Lighthouse.
