One of the Help Wanted cases is to earn 20 tips in the cafe, I have 60 banked. If I tap on them all 60 disappear which is frustrating because I know I’ll get this same Help Wanted case again a few more times during competition. Is it possible to only use 20 of the 60 (or however many) that are there?

Remember also, when you serve a drink, you will receive 20 tips that satisfy the HW task without having to collect from the tips jar.

No, you can not partially collect the tip. It's all or nothing.
