On an island I have seen 5 blue birds and 7 geese flying in groups. How does one get these? There was no Aviary.

Players can only raise and release birds once they complete the Aviary. It's possible you saw an island of a Wooga employee, who is not limited by that constraint. Or maybe just a glitch, such that you could not see that player's Aviary during your visit.
