What happens to the gold bars if you don't use them? Do they save and get added to the next challenge rewards?

Yes, gold bars are saved. To see your gold bar collection, tap on a 3x3 coin-generating building or the 4x4 Estate, then tap on the green button that has a house & hammer icon. The count is at the top.
