I have 999 of wood and hammers and when I send Jack on a delivery it’s seldom these materials that are used. How can I get rid of these materials because it’s harder to fulfill cases about collecting materials when you’re at maximum?

It's a problem. The only way to get rid of excess materials is to keep picking delivery routes that uses as many of these materials as you can. If your current deliveries don't use them, choose the quickest delivery, to get Jack back, so you'll get another selection of deliveries. Don't let Jack, slack off. As soon as he's back, send him off again.
