When the Help Wanted tells me to collect 220 coins from the estate should I wait until the coins are at their maximum value?

No, there is no advantage to waiting for maximum. Ideally, you should collect them before they reach maximum of 60, so they they can keep continually generating. Estate generates 1 coin every 10 minutes, until they reach a maximum of 60 after 10 hours.
