What's the role and are there any benefits to being an officer? Is it better to have most of the team as officers or just have one officer?

An officer helps the president in whatever capacity the president specifies. Officers have the same capabilities as president, including inviting players from the boat list, changing the club descriptions, and promoting and removing members. Only thing they cannot do is demote another officer and disband the club. Whether it is better a club have one or many officers, depends how much the president can trust their officers.
