Is it a mistake to sell off items?

It is better to store the items. But if you are desperate to move forward faster, selling is a way to do that. By selling, you lose half the coins that you paid for it and lose all the Flower value permanently. Since you get half the coins back, that will help you toward your next purchase, which must have more Flower value, or else you will not be advancing.
