Buying the fancy drinks in the lounge with your tip tokens only gives you the option to change the appearance of your drink. There is no game benefit; they give the same amount of energy as your coffee. Best strategy is to first upgrade your drink energy to maximum of 15, so that you and teammates can all benefit.

How do I apply my earned tips to upgrade the energy?

Enter the lounge, then enter the cafe through the Tea Set icon. Make sure you have collected the necessary tips by tapping on the Tip Jar. Then tap on the Shopping Bag icon in the lower left corner. Here you can shop for items with your tip money. If you have the required number of tips, the button will be green, otherwise it'll be gray. Energy Increase is the 2nd panel from the left.
