I have noticed that players with a lower level that mine are way ahead on the lighthouse restoration I never missed a day. Why is that?

As you know, lighthouse (and other landmark) renovation is dependent on how often you renovate (every 20 hours is the the most frequent) and not dependent on how far in the game you are. So a person with a low level and a completed lighthouse, has been playing a long time, but only played the game a little so that their level is not as high as yours.
