Any reason not to have the big fire on all the time when you have infinite wood supplies?

No reason at all. BUT, when you upgrade the fire, it moves to coal, and then you are wasting resources. Make sure to only upgrade when your coal is producing a sufficient amount, or you have a surplus that will last until it is making a sufficient amount.
