You get extra coins for placing well in the race, but also for bashing people off of the water slide.
However at the moment, we have no idea what the coins are for. Maybe the developers have a plan to use the coins in some way.

no, not at this moment. i think in the future you’ll be able to, like on skins & stuff. they just haven’t developed everything yet.
