I'm no expert but I know this, press the attack button when the animal is dead. It depends on the size it is, but you can carry it.

You have to make sure that you are standing above the animal, before it disappears. Push the scratch icon, the three lines one, then the animal's head will drop down, when it comes back up, you'll have a dead catch in your mouth.
