How do I upgrade my den to beach or castle??

Well you don’t upgrade it necessarily, but what you do to change your den to one of those, if you click the single player button, on the left side it says your den and shows a pic of it. Click the pic, and you can scroll through the other dens. Click the one you want, and voila. Though the dens cost a lot of gems.
