Join an alliance or not? How do I know which alliances are best for me?

There are many perks to joining. Find one that is active enough to be able to help enough people for those achievements and get help on the group activities like undead camps.

If you do not join an Alliance, you are fair game for any player to attack you. Plus, you would not be able to rally with others to take down Undead Army Camps or other strange creatures that are on the plains. My suggestion is to try and get in with a level 5 Alliance and grow your Estate. Then progress to a higher Alliance.
