How can I change the screen orientation / control from one had to two etc. It gave me a choice at the start but I want to try the other way.

In the main campaign screen you will see a small controls icon to the top right of the globe (looks like 3 sliders and buttons). Tap this to go to the options menu. There you can change the control layout.
