My customers are only eating one thing then leaving?

I think maybe you have prepared the wrong things for your customers on your sideboard. Try going back to simpler items such as a bowl of rice, or rice balls or nori. Most customers will like these.

Also make sure that you actually have dishes prepared on your sideboard as they will only order from what is prepared.
