How can I change weapons on the ”Best Levels” level?

How can I change weapons on the ”Best Levels” level? It seems that I can only use a little pistol on all of these levels even though I’ve purchased sniper & assault weapons.

Because you gotta use the pistol 5 days and complete all 30 missions. Once you do that you can move onto the next gun.
