How do you gain gems? Is the occasional gift from the board the only way? And how come when I buy more energy, the price of gems goes up every time? Does it just infinitely go up on how much it costs?

You can either buy gems, or gain them from various treasure chests. If you stack the free gift boxes the game gives you until they are level 3 (over 4 days) you can usually get quite a few.
As for the increase in cost for energy - it's a micro transaction game. If you want to keep getting energy, you have to pay. I think it caps out at 160 gems for 100 energy.
