Which ball do I use to get my opponents gems when hitting them?

There is no such equipment, you hit them or they hit you out of bonds, you collect their current winnings, not all courses permit an out of bounds hit, water is OB in all situations, Bunkering them is still in play and so no grabs of their gems, anything other such as over a fence or such and off the course leads to an OB will get the one hitting the other said gems of the ball going OB.
