How do I complete the Farmers set? I have dozens of all items but the one in the middle. I can’t figure out how to collect it.

I think the best way to complete the sets is to NOT search for the items, and eventually you'll find them somewhere, keep removing items on the map until you get what you need. Even if you don't get the exact item you are looking for, you'll probably find things to help you complete other sets.
